I spent years of my life avoiding butter on everything, especially bread, but now it’s become one of my favorite ways to nourish myself. It’s simple yet sweet and sustaining. It’s easy and comfortable but never boring.
When I pull the ceramic cover off the butter dish and plunge my knife into the stick’s soft, white edge, I can already taste the tangy sweetness melting around my tongue. I can feel it warming my whole body already as I pull the pat across the grain, watching it soften and seep deeper into its new home. And then it’s time.
The whole process feels good from start to finish, and like the best is always yet to come.
